The Genuine Flavors of Mexican Gourmet Cuisine

The focus of “Mexican Home Cooking School” is a classic gourmet cuisine; well beyond what is usually understood to be Mexican food. The marriage of three kitchens: Spanish, French and Indigenous has created a cuisine as intriguing and complex as Mexico’s baroque heritage.

Sauces are key to the dishes of Mexican Home Cooking. Though made from seemingly simple ingredients, their success lies in carefully building flavors to achieve a multi-layered taste experience that is at once delicate and intense - a tapestry of flavors that combine native and European influences. With our guidance you will be able to recreate their delicate secrets.

Dona Estela talks about Mexican Home Cooking

"What I teach far surpasses what is usually understood to be Mexican Food.

A very high cuisine developed in this area of Mexico in pre-Hispanic times. It was added to and enhanced by Spanish and the French during their occupations, resulting in a kitchen as rich, subtle and complex as any in the world. This level of sophisticated gourmet cooking was kept in households for special occasions. It is almost never found in restaurants and is nearly lost to the present generation of Mexicans, as the culture begins to leave the third world.

You don't need to be an advanced cook to learn this cuisine. The techniques are simple to learn, but you'll be surprised how complex the flavors turn out. Though my classes cover the flavor nuances of a host of chiles, this is not a course about hot and spicy food. It is about flavors, as ancient as the Aztecs and as sophisticated as French cuisine. And, the classes are fun.

I am passing on what has been kept alive in my family of these dishes and traditions. My desire is to offer a special experience and open a door to Mexico that is rarely available to tourists. Each guest is unique and has different interests, so we open that door as little or as wide as desired, to the city of Tlaxcala, the people, small, picturesque towns, archeological sites, magnificent surrounding country, local pulquerias, marketplaces and my home.

Unlike an impersonal resort or hotel, we are available to respond to individual needs and as much as possible we structure our classes to the interests of our students. I can also add that for a woman traveling in Mexico, this is a safe base where you are well cared for, from which you can sight-see and experience the country.

If you are interested in very small "hands on" classes on this basis I can assure you a very exciting and useful stay here.
